Chocolate Crackles

This recipe goes back to my childhood in Australia. Birthday parties were not complete without chocolate crackles! I have lived in America for 10 years now and have never been able to make them because I could not find that one elusive ingredient that holds it all together….





…until now. Copha is a type of coconut oil that is solid at room temperature and a staple of sweet party and holiday treats in Australia. After some research (God bless the internet!) on the exact properties of Copha, I found this:





It was so close to being copha that I decided to give it a try in my favourite childhood party treat…





CHOCOLATE CRACKLES!

I’m having flashbacks to childhood birthday parties as I write this…no we’re not going to talk about my traumatizing eleventh birthday when only one person turned up to my slumber party.

*twitch*

It’s really not the most healthy of things to eat, but everything in moderation, right?

…Right?…




Ingredients
4 cups Rice Krispies (I’m still trying to get used to calling them that. They’re Rice Bubbles back home!)
1 1/2 cups powdered sugar
1 cup dried, unsweetened coconut flakes
250g (about 8.5 oz) coconut oil
3 tbsp cocoa powder


Directions
In a large bowl, mix the Rice Krispies, powdered sugar, cocoa & coconut.
Slowly melt the coconut oil in a saucepan over a low heat and allow to cool slightly.
Pour it into the Rice Krispies mixture, stirring until well combined.
Spoon mixture into paper cupcake liners and refrigerate until firm (about an hour).

This recipe yields 18-24 servings, depending on how big you make them.
